Ingredients

  • 4 cups cold water
  • 3 tablespoons chia seeds
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey or agave syrup
  • 10 fresh mint leaves, plus extra for garnish
  • 1/8 teaspoon sea salt
  • 1 cup ice cubes

Instructions

  • In a large pitcher, combine cold water, chia seeds, lime juice, honey or agave syrup, and sea salt. Stir well to mix all the ingredients thoroughly.
  • Let the mixture sit for 5 minutes, stirring occasionally. This allows the chia seeds to absorb the liquid and develop a gel-like texture.
  • While the chia seeds soak, gently muddle 5 mint leaves to release their flavor. Add the muddled mint leaves to the pitcher.
  • Stir the mixture again and add the remaining whole mint leaves. Taste and adjust sweetness or lime juice if needed.
  • Add ice cubes to the pitcher and stir once more. Serve immediately in glasses garnished with extra mint leaves.
