Roasted Sweet Potatoes
- 2 lbs sweet potatoes peeled and cubed into 1-inch pieces
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Hot Honey
- 1/3 cup honey
- 1-2 tsp hot sauce like sriracha or Frank's RedHot, adjust to taste
- 1/2 tsp apple cider vinegar
Bowl Assembly
- 2 cups full-fat cottage cheese or low-fat if preferred
- 1 avocado sliced
- 1/4 cup toasted pepitas (pumpkin seeds)
- 2 tbsp fresh cilantro or parsley chopped
- 1 lime cut into wedges for serving
Preheat oven to 425°F (220°C). In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and caramelized at the edges.
While the potatoes roast, combine the honey, hot sauce, and apple cider vinegar in a small saucepan over low heat. Warm for 2-3 minutes, stirring until smooth and slightly thinned. Remove from heat and set aside. The sauce will thicken as it cools.
Divide the roasted sweet potatoes evenly among four bowls. Top each with a generous 1/2 cup scoop of cottage cheese. Arrange avocado slices alongside. Drizzle the hot honey generously over everything.
Sprinkle each bowl with toasted pepitas and fresh herbs. Serve immediately with a lime wedge on the side for squeezing over the top.
