Ingredients

Roasted Sweet Potatoes

  • 2 large sweet potatoes peeled and cubed into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Hot Honey

  • 1/4 cup honey
  • 1-2 tsp hot sauce like sriracha or Frank's RedHot, adjust to taste
  • 1/2 tsp apple cider vinegar

Bowl Assembly

  • 2 cups full-fat cottage cheese or low-fat if preferred
  • 1 avocado sliced
  • 1/4 cup toasted pepitas (pumpkin seeds)
  • 2 tbsp fresh cilantro or parsley chopped
  • 1 lime cut into wedges for serving

Instructions

  • Preheat oven to 425°F (220°C). In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and slightly caramelized.
  • While the potatoes roast, combine the honey, hot sauce, and apple cider vinegar in a small saucepan over low heat. Warm for 2-3 minutes, stirring until smooth and combined. Remove from heat and set aside. The mixture will thicken slightly as it cools.
  • Divide the roasted sweet potatoes evenly among four bowls. Top each with a generous 1/2 cup scoop of cottage cheese. Arrange avocado slices alongside. Drizzle the hot honey over the entire bowl.
  • Sprinkle each bowl with toasted pepitas and fresh cilantro or parsley. Serve immediately with a lime wedge on the side for squeezing over the top.
