Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/4 cup dill pickle slices
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle juice
  • 1 tbsp vegetable oil

Instructions

  • Prep the Sauce: In a small bowl, mix mayonnaise, ketchup, yellow mustard, pickle juice, and smoked paprika (if using). Stir until smooth and set aside.
  • Season the Beef: In a medium bowl, combine ground beef, salt, black pepper, garlic powder, and onion powder. Mix gently with your hands until just combined. Divide the mixture into 8 equal portions and roll each into a loose ball.
  • Cook the Smash Burgers: Heat a large cast-iron skillet or griddle over medium-high heat. Add 1/2 tablespoon of vegetable oil to the skillet. Place one beef ball in the skillet and immediately press down firmly with a spatula to flatten into a thin patty. Repeat with a second beef ball, leaving space between patties. Cook for 2-3 minutes until the edges are crispy and browned. Flip the patties and cook for an additional 1-2 minutes. Sprinkle each patty with a tablespoon of shredded cheddar cheese while still hot. Remove from skillet and set aside. Repeat with remaining beef balls.
  • Warm the Tortillas: In the same skillet, reduce heat to medium and warm the flour tortillas for about 30 seconds per side until soft and pliable. Remove from skillet and cover with a clean towel to keep warm.
  • Assemble the Tacos: Spread a tablespoon of the prepared sauce on each tortilla. Place one smash burger patty on each tortilla. Top with shredded lettuce, diced tomato, red onion, and pickle slices. Serve immediately.
